Chit potatoes

If you want to give your seed potatoes a head start, you can 'chit' them before you plant them by putting then in a cool, light place so that small healthy green shoots develop of the 'eyes' Potatoes are really modified stems, and the eyes are buds waiting to break into new shoots.
