deal with bolted onions

Cold weather in spring can trigger onions, garlic and shallots into bolting(running to seed) in their first year. Snip off flowerheads to prevent energy being wasted on producing seeds, then use up the bulbs in cooking as soon as you need them - unbolted bulbs will store, those won't.
