Use bolted onions first

Some onions are beginning to bolt (go up to flower) and the thickened fleshy stems won't dry off to let you to store them properly, so harvest these first. Cut off the flowerhead when you first notice it,  then lift onions as you need them.  The flower spike will have taken energy from the centre of the onion bulb as it develops, and the tightly furled leaves here may be showing green, so you will have to discard the centre before you can use up the bulb in cooking.
