This 'volunteer' potato, weeded out from where last year's potatoes are being replaced by carrots and courgettes, is a good reminder of why you need to keep earthing up your potatoes for a good crop. The potato that was missed from last year's harvest throws up a shoot, and on that stem the new potatoes (stem tubers, if you are a botanist) grow. The more stem that you can keep underground in the dark, the more tubers you will have, and the larger they can grow.
