Earth up potatoes

As the potato foliage emerges, draw up soil from each side of the row to cover it; growth is rapid so the shoots will re-emerge very soon, but keep earthing them up - it will protect the leaves from late frosts and allow plenty of room for young potatoes to develop underground.
