Cynara cardunculus

The spectacular grey foliage of the cardoon (and its edible relative C. cardunculus var scolymus, the globe artichoke) is topped by dramatic purple thistle flower heads in late summer. Unfortunately it's a magnet for aphids and the stems are often covered in hundreds of blackfly.
