During the summer you can harvest onions as you need them, starting with those running up to flower, as bolted onions won't store well. With the others, the foliage starts to bend down at the 'neck' and die off naturally. At this point you can loosen them with a fork, leaving them on the ground for a few days before bringing them in to store.
