Generally, garden peas aren't all ready to harvest at once, though commercial cultivars are bred to encourage this for easier harvesting. This means that to eat peas at their best, you need to check every day or so once pods start to swell, and keep harvesting just those pods which are completely full but have not yet starting to toughen. The smallest and sweetest peas, which haven't yet begun to be starchy, may not even get as far as the kitchen.
