Use a draw hoe to pull soil from either side of the row to cover the new foliage - or if you planted in furrows, push the soil from the ridges into the furrows to level the ground, then next time you can start to draw up new ridges; earthing up increases the depth of soil in which potatoes can form, and helps to protect the foliage from late frosts.
